The best thing is to put the server on a virtual machine and try to solve some real tasks on it.
During the training, you will still use the Internet, manuals, articles. So that's how you learn.

wonderful book www.ozon.ru/context/detail/id/3285836/ advised many, everyone likes it.
I myself studied without books, but the book at the initial level will probably be more useful than the search for mana from every first pupkin. ibm developerworks has some good articles for beginners.
and more practice, as advised above. don't be afraid to experiment.

tbkh.ya.ru/replies.xml?item_no=5750 read this list. And there's a lot in the comments. I would also add the OpenBSD crash course if you are going to work with BSD.

The best Unicas book I've ever come across is FreeBSD - The Definitive Guide by Michael Lucas. Yes, it's about FreeBSD, not *nix in general, but it's very well written! You can learn a lot more about Unixes from blogs. Mine for example (see profile) ;)

faq ru.unix.bsd:
>Q: What are the books published in Russian on FreeBSD?
A: (by Igor S.Savchyk) As of
summer 2006 there are 7 such books:
1) Brian Tayman, Michael Eben «FreeBSD. Administration: the art of
achieving balance. Encyclopedia of the user”, 2003
(there are already several different editions of this book in Russian, the
book is mainly for novice users).
2) A. Thorne, A. Fedorchuk “FreeBSD. Installation, configuration, use,
2003 (the book from our domestic authors, for novice users,
is distinguished by a slight informality of presentation, which makes it more
interesting and easier to read compared to other purely
technical texts).
3) Roderick Smith "The Complete Reference to FreeBSD"
(FreeBSD: The Complete Reference), 2004.
(A reference book for beginners as well as intermediate users.
This book is not suitable for those who are starting to learn FreeBSD for the first time).
4) Michael Lucas FreeBSD. Detailed guide "
(Absolute BSD. The Ultimate Guide to FreeBSD), 2004.
(The book is oriented mainly as a detailed guide for
novice users).
5) Sergei Ivanovsky "The UNIX FreeBSD Operating System: A Simple
System Administration Course for Beginners and Advanced Users",
2004. The second edition, as well as its first edition, is a rare crap.
Achtung! This author, with manic tenacity, republishes the same book
under different titles, for example, "The most frequently asked questions
on FreeBSD" - look, don't get in the way by buying this kind of "book".
6) Fedorchuk A. "Accessible UNIX: Linux, FreeBSD, DragonFlyBSD,
NetBSD, OpenBSD", 2006. A very good introductory book into the *BSD world
for beginners: written in a very easy language, as generally and
consistently as possible, describes the general principles of all modern
BSD- systems, even the newfound DragonFlyBSD is being considered.
Despite the mention of Linux in the title, the author strongly gravitates towards the
review of BSD systems, I recommend it!
7) Marshall Kirk McKusick, George W. Neville-Neill FreeBSD.
Architecture and Implementation”, 2006. Operational Russian translation of what has already
become a classic and, in a way, the only book
on the internal structure of modern FreeBSD,
written by famous *BSD authors in the world. The book
deals with the giblets of release 5.2, of course, that the book
is intended mainly for system programmers. But
be warned that due to the initially huge amount
of material, the book resembles more of a sequential outline
of the FreeBSD device - do not expect to find a comprehensive
encyclopedia on the FreeBSD architecture in it.
For a deeper and more detailed acquaintance with the subject, very
it is recommended to additionally purchase a very famous and respected book
in the world of UNIX administrators:
8) Nemeth E., Snyder G., Seabass S., Hein T. “UNIX. System
Administrator's Guide", especially since in its last 3rd edition of 2002
it already contains direct recommendations for administration, including FreeBSD.
ps: I would also add “Yu. Vahalia - UNIX from the inside.

The only thing I would like to add is how to use the literature. Most of the books listed here are reference books. For example, take Evi Nemeth's "Linux Administrator's Guide" (1072 pages), this book contains sections on creating backups on tape media or other highly specialized moments. Therefore, I advise you to use this book as an instruction, for example, you configure dns, open and read the section about dns, reading from cover to cover as fiction did not bring any benefit to me personally. And of course theory must be combined with practice. Perhaps I am presenting well-known truths, but in due time it would be useful to me.
