UFW does not close port 25, how to force it?

Hello everyone
I tried to naively close the ufw deny postfix command to close access from the outside to port 25
The ufw status verbose command displays

ufw status verbose
Status: active
Logging: on (low)
Default: deny (incoming), allow (outgoing), disabled (routed)

But the interactive postfix logs show that there are connections from spammers and the mailer logs are still littered with attempts to connect, what did I do wrong?
