sudo apt-get install ubuntu-desktop

You can just do sudo apt-get install ubuntu-desktop and on the login screen choose whether to load "Kubuntu" or "Ubuntu" .
And about booting from a flash drive - it doesn’t matter which system is already installed - there are two options - either the flash drive is not bootable (including problems with secureboot), or the boot priority is incorrect.
Both are diagnosed and written on the screen during the boot process.
