You probably have somewhere in the config written access_log on;.

most likely you have loeration enabled there, or for example, a variable is used in the log path, and this is a purely text value, as a result, the path remains "crooked" and as a result of this, a log file is created right here, and fun everything starts to be written into it.
Feel free to delete this file and look for who creates it.
