Stable Mail server on vServer with the ability to listen to the process?

Hi all. There is a need to raise your own mail server.
Task: a regular mailer + when receiving an email to any mailbox, redirects the letter to the private mail of the owner of the account, writes a record to the database, the server itself does not store mail.
I am a php programmer, I will write features, the main thing is that the server makes callbacks or at least writes statuses that crons could respond to.
As extra. feature (I don’t know how to implement it yet): correspondence like on Amazon with sellers -> they write me a letter to the above server, for example, to [email protected] from [email protected], from there it is redirected to a personal box where the sender of the letter is not [email protected] and dynamic server soap. when replying to this letter, the server sends a letter from [email protected] to the recipient [email protected]
Well, the number of mailboxes should not be limited to five.. :)
In short, a kind of preServer, so to speak.
So, which servers are simple, stable and give control over what is happening? I have never set up a server, so I don’t know what they can and what not.
