You buy an old Canon soap dish, put CHDK and a script for time-lapse shooting on it. Naturally, bring food and cover with something from the rain. The only inconvenience is that the output will not be a video, but a bunch of frames in Jpeg.

As an option - almost any surveillance camera with a built-in memory card. If I'm not mistaken, Hikvision box cameras have such an opportunity - to take pictures at a given interval. The cost of the cameras together with the casing is no more than a couple of hundred euros.
