vm is organized on esxi 6.5 (cpu 8 / ram 6gb / ssd 100gb)
server 2016, configuration 1C Accounting 2.0, file version of
work 1C via remoteapp.

You didn't specify the size of your file base and how many users. The file base has a size limit + with a large number of users it will slow down due to architecture limitations and a simple increase in computing resources cannot bypass these problems. If the database is small in size and there are not many users, then you can switch to BP version 3.0, which can already be published on a web server (Apache or IIS), which will help remove some of the problems.
If there are a lot of users and the database is swollen, then you need to switch to SQL (PostgreSQL or MS SQL).

6GB RAM - for the server, this is nothing at all.
I have at least 8Gb on client machines and this is sometimes not enough.

disable hyperthreading.
try the option with SoftPerfect Ram Disk + Frequent backups.
Make a copy in the config. Then recalculation of totals and reindexing.
Update the platform to a different version. Either older than your release or put the newest one.

Transfer the database to ms sql + move logs and backups to different disks. RAM should be at the rate of 300..400 MB per user. Server 1c and ms sql is better to spread on different disks.
