Should I start with the default exim config in debian 7.0?

I want to transfer mail from the provider to vps under my control.
Is it worth starting with the default config, or is it better to start making your own right away?
A mailer for a small company for 10+ people...
I did mail with exim about 10-15 years ago, now everything has gone far ahead (SPF, DKMI, greylists and a complete mess) and I look at everything with a dull look. I don’t want to immediately get into a bunch of blacklists and fill up the domain.

Install the iRedMail package and slowly poke everything in 40 minutes :)

Why don't you use postfix? It has a much more sane and convenient config syntax, and a large number of howtos in the public domain.
