With a competent organization of the virtual infrastructure, there is no need for a fast flash drive. If you have all virtual machines on some kind of storage (FC, iSCSI, NFS - it doesn't matter), and ESX is only engaged in "computing", and there are no machines on local disks, then any flash drive of 2-4 giga will do. Ideally, you just need to start a syslog server on the network (any unix server can act as it) and make a separate scratch partition on the storage. And then the flash drive will only be needed to boot ESX, and will not be used in any other cases. And then any cheap flash drive will be enough.

The hypervisor works great on the cheapest flash drive, it does not affect performance, because after loading the hypervisor lives in RAM, I would advise you to take a flash drive with 4+ GB, it can be less, but the memory controller will have fewer spare blocks on the flash drive to replace broken sections.
