Several ovpn clients are running on Mikrotik, how to register traffic from a physical port through a specific tunnel, from another port through another, and so on.

Use the route rule, specifying as the Src Address the address behind the interface (of networks or a computer that needs to be directed to a separate tunnel), and directing traffic to a separate routing table - where you already specify either the interface (if L2 mode) or the address of that side of the tunnel (if L3)
