Set up Exchange as an email client for Gmail?

There is a Company with corporate mail on Gmail (domain @company.com)
Task: To carry out a smooth migration from Gmail to your own Exchange.
Now deployed a new Exchange (domain @company1.com)
To train users to work with Owa, instead of their usual gmail, it is planned to temporarily collect / send through the Gmail mail server.

Each user has a mailbox [email protected], all mail is collected from gmail using https://www.mapilab.com/exchange/exchange_pop3/ , but how to send emails on behalf of [email protected]?

The concept of migration is a bit wrong, it would be correct to create the same zone on the exchange (you can think of doing this at this stage as well), i.e.
* create Accepted Domain - company.com - type Internal Relay
* create SMTP connector for company.com - smart hosts - point to google
* change MX records to Exchange IP
from now on the logic will be as follows - mail comes to exchange - if the mailbox is vasya @company.com no - then everything flies to Gmail.com, if there is - the mail remains only on the exchange.
by imap - mail is sent to local pst to a large storage on the server - after full synchronization of the mailbox, the user's mailbox is created on Exchange at night, the password on Gmail is changed so that he could not enter there.
The only question is sending mail to company.com - when the user is still on Google, and the other one has moved to Exchange - but here you need to read Google's mana on setting up migration plans (or someone else's experience).
PS
After migration of the last user - the domain type changes to Authoritative - smtp connector - is deleted.
