Server for virtualization, which VmWare license to choose?

I ask for advice.
To begin with, we are currently using VMware ESXI 6.0 Free on an HP ML350p Gen8 server, 10 virtual machines (based on Linux OS) are running. We make backups using rsync and pg_dump and dump it all via SSH to a dedicated machine running (Linux OS).

We also need a server, because we want to transfer existing services from regular hardware to server hardware.

There is an idea to purchase 2 new servers and storage for storing virtual machines. Approximately I will sign which VMs will be launched.

1 VM - 1C:Enterprise (SCP, ERP), (Linux OS) number of connections 150, OP 32GB, Disk space 200GB.
2 VM - PostgreSQL database server (Linux OS), number of connections 150, RAM 32GB, Disk space 500GB.
3 VM - Terminal Server (OS Linux) number of connections 50, OP 75GB, Disk space 500GB.
4 VMs - ACS - (Linux OS), RAM 4GB, Disk space 50GB.
5 VM - File server (Linux OS), RAM 8GB, Disk space 5000GB.
6 VMs - Gateway, DNS, DHCP server, Firewall, HTTP-Proxy, OpenVPN (Linux OS), RAM 16GB, Disk space 200GB.
7 VM - (Linux OS) Mail server + Domain controller, RAM 16GB, Disk space 1000GB.
8 VM - GLPI (Linux OS), RAM 4GB, Disk space 50GB.
9 VM - Self-written program runs on (Linux OS), OP 8GB, Disk space 50GB.
10 VM - CyberPower agent (UPS) (Linux OS), RAM 1GB, Disk space 10GB.

In total, approximately 7.5 TV of disk space will be required and 256GB of RAM should be enough. (Above, the actual consumption of OP at a given time on the services is painted).

We are thinking of purchasing an ESXI license and combining 2 servers into a cluster in order to increase fault tolerance (since downtime is already critical for our organization) if one server fails, so that all machines start on the second server. The question is which ESXI license is better to take, if you buy the Essentials kit, then it will not be possible to automatically start the VM on another server in the event of a breakdown, if you buy the Essentials kit plus, then there is such an opportunity, but the price bites.
We also want to use our existing HP ML350p Gen8 server for backups. Make backups using Veem backup up to 10 VMs, for free.

The question is, do you think this idea is generally good or can someone else suggest implementation options or share their experience.

If it is on VMWare, then Essentials kit plus is the minimum one, where there is vMotion and other goodies that are needed for automatic crawling of cars. If you raise it with your hands, it is enough to have machines on a common storage

There is money for a decent server, but no virtualization environment :)
You need to take one sphere license - for vCenter to work - and according to the number of sockets of standard processor licenses. And do not save on backups - kroilovo leads to popadalov.
