Responsive and functional encrypted remote access from Mac to Linux desktop?

I tried TeamViewer, but for some reason the one that doesn’t know how to work with a clipboard from a poppy to Linux, and sometimes utter glitches like twisting the keys when the shift is pressed.
Linux (Ubunt) is not behind NAT, so VNC or something similar is sufficient. But really working.
Who knows the working options to get responsive and functional remote access from mac to desktop linux?
EDIT: Also it is necessary that the connection is encrypted and it is desirable that everything be free (so RealVNC in the furnace)

Still you can X11 over ssh stupidly.

1. x11vnc - more settings, works even when the user is not authorized yet.
2. tigervnc - easier to understand
3. vino - for GNOME
For client access, any vnc client will do.
