You can hang cookies when you consciously switch to the full version, and wrap your code in checking this cookie. No cookies, redirect, if any, do not touch the poor user.

As for the very definition of a mobile phone, it’s still better to use this library , a good interface, plus you don’t need to keep track of updating new user agents yourself, just update the package.
As for the full version of the site on mobile, here, as you were advised above, add a cookie (conditionally force_desktop) and additionally check it in all conditions. And of course, leave for such people a button to return to the mobile version, which will reset this cookie.
