Publishing an iPhone app?

Need help from iPhone app developers.
Do I understand correctly that the only way to distribute an application (even if just among friends) is to publish it in the app store? Is there a way to create a signed application in the form of an ipa file that will be installed on any unlocked iPhone simply through iTunes?

On any unlocked phone, you can only get Ad hoc. This requires a developer registration with Steve. After that, we create a distribution profile with an ad hoc walkie-talkie. We give the person our program compiled according to this profile and the profile file itself. He drags this case to iTunes and cheers, he has the program. If there is no jail, then just putting ipa will not work.
