Perhaps a stupid question, but how to show a portfolio of freelance sites so as not to burn all the sources (as is the case with github)?

Well, except for the option to make a separate site

What about the meaning?
It’s just that the site is, firstly, simple, secondly, it’s understandable, thirdly, it’s very cheap

screenshots, if you need an interactive version, then place the layout of the first page on your site and give a link to it.
the rest is exotic and it is unlikely that the portal will allow, people will download

On freelancing, your source codes didn’t give up on anyone (and hardly anywhere else).
The main thing there is to show that you can do what the customer imagines in his head, and he imagines not hundreds of lines of code, but buttons and pictures.
Therefore, the conclusion: Take screenshots, post them. Everything.

Just deploy from git to netlify with your own domain (a subdomain for each project). The most comfortable thing I've ever seen

Screenshots. Perhaps a video if you need to show cool animation.
But there is little trust in screenshots. It's better to watch the full page.
PS:
Nobody needs your sources and for nothing.
