How can I run several identical services (two vsFTPd or three FreeRADIUS) on different configs at the same time?

You can make several service configuration files for systemd and pass your own config in each parameter.
Many services already contain a similar "universal" configuration file that allows you to run multiple instances of the service out of the box. For example, openvpn has this, as far as I remember.
In general, deal with configuring services in systemd. It's not that hard there.
