Depends on the network configuration:
If it is possible to select a VPN subnet (for example, the network 10.10.0.0 is used there, and 192.168.1.0 in the LAN), then in IP-Route you create a rule, "to these IPs this gateway". Well, everything else is determined by the rules there. VPN server IP -> gateway "Eth1"
