Logging a 500 error?

Error 500 sometimes crashes when the script is running, either there is not enough timeout, or something is wrong during the interaction of the database. Timeouts are set to large error display enabled. I looked at the Apache log, now there are the last errors of 3 days ago.
Question: I heard that in Apache there is error logging of different levels of criticality. What level does the 500 error belong to and where can it be configured?

You are programming not in the OS but in the IDE (I hope)

Mint, Fedora, Debian, Alt Linux. The Ubuntu user himself.

Gnome 3, very stable - I used ubuntu for more than a year as the main system, Apport errors often, in general, this is not on Gnome, my opinion is Gnome3 or Fedora

As for an experienced comrade, I completely agree with Victor Alenkov . If there is no experience with linux - something "friendly" (and then "bubunta" comes to mind: D It seems to be considered the most friendly :) )

Ubuntu, Mint, Debian, OpenSuse, Slackware. Here is what I like, I tried all of them, each has its own differences, no matter what distribution you use, for programming you will still use, as mentioned above, ide.
If you have little experience with linux, then you can start with ubuntu.
ps At the moment I've settled on ubuntu.
