Some, such as PSI, simply display in the status the video the user is watching and the song the user is listening to.

The option 'over the shoulder' did not look at the screen? the person is not familiar, it could just be a passer-by who looked out the window.
Another option, they sent you a link to a YouTube video in the messenger, with a 99% probability you would have watched it, especially if you guessed it with the topic (we talked at work), later you can say with a guarantee that you were watching this video at that time.
Next - phishing, do you have YouTube for sure YouTube and not some kind of youlube? or maybe you go to the http option (an attacker can MITM such sites, replacing, among other things, analytics scripts, but this is a bit hardcore)?
Therefore, more information is needed, for example, how did you watch this video, how did you come to it? search in Google / YouTube or from a third-party site? Or did you throw a link in the messenger?

The fact that the letter says what video you watched on YouTube does not mean at all that the sender knew this.
The easiest way to find out this information is by sending a request to YouTube from your own browser.
So I would bet on a leaky "messenger", and nothing more.

At work, there may be a transparent proxy or mim in general, and a person, either one of the admins or through them, could find out where you go.
