Combining WordPress + Woo with so many products requires hardcore optimization, a couple of minifier plugins and changing the PHP version, you definitely can’t do it here. The moment you shoot yourself in the foot is the moment you buy this premium theme. If I'm not mistaken, I myself encountered this particular topic about 3 years ago, and then the customer also had an urgent question about the speed of his IM. The list of poor solutions for this theme is standard: WPBakery Page Builder, Slider Revolution, Woo + custom functional plugin from the theme authors (shortcodes, duplicate requests, and other rubbish like Google fonts). All this rubbish, on top of which there is a solid amount of goods for Woo, is the main cause of your problem. On your own behalf, you also added Autoptimize, which at the output combined the main styles into one file weighing 1.2Mb, all sorts of counter metrics and custom styles for which TTFB jumps from 2 to 5 seconds. In general, you definitely have something to work on. Although, if you initially knew that there would be thousands of products, then it would be better to choose a niche CMS for IM, Woo becomes more and more clumsy with time.
Specifically about the 504 error:
1 - if you use CF, which of the two variants of the 504 error did you see?
2 - it is desirable to enable WordPress debugging and see if there will be any entries;
3 - while solving the issue with the speed of the site, it is better to disable minification and caching (both from the side of plugins and from the side of CF);
4 - if you do not understand server issues and their settings at all, then at least intuitively try to understand after what actions an error message appears.
