You need a plugin for Sublime text to force hide selected lines, for example, as it is implemented in Notepad ++ - selected lines => RMB => hide selected lines.
Sublime text only allows you to hide the content of tags or selectors.

Select the text and in the menu Edit - Code foling - Fold.
