The main factor is the ability to quickly create a simple template from scratch for this store.
I started doing it on Phpshop, but the trouble is that bootstrap is already integrated into the store environment itself, and the desired template is implemented without bootsrap. Eradicating bootstrap is too long and useless.
In general, you need the initial functionality: shopping cart, sorting by price, category, product description.

I would recommend not to invent a template from scratch, for example, it took us about 1.5 months to create the simplest version of the template.
Modern stores are quite complex, you now only need a shopping cart, sorting by price and so on.
But what about the order in 1 click, ordering a call, comparing products, hints during registration?
And also, for example, a drop-down search, a multi-level menu, a personal account, finally =)
