Is Telegram privacy questionable or am I paranoid?

Two questions:
Many companies are measuring their.....levels of encryption, privacy, non-government, including Telegram: from open source to secret chats.
1) how to check that the open source they poke under everyone's nose is the basis on their servers? How can I check that the code they posted (for example) on github is identical to what they have on the server? They can show the clean code on github, and the modified one will be uploaded to the server.

2) why didn't Telegram make all its STANDARD encrypted chats? Why do I have to enable it MANUALLY in order to communicate with the user encrypted? What did it cost Telegram to make all chats encrypted, since they are shouting at the top of their lungs about privacy?

The messenger was available for phones with the Android operating system and for Blackberry devices. The service cost about 1.5 thousand euros for six months.

Because encrypted chats cannot be synchronized on all devices, and without it they would be uncompetitive

No way. It's purely a matter of trust. It is impossible to check any service - what a cart, what GDrive, what Dropbox, what any VPN / proxy that does not administer itself. And given the extreme politicization of the cart - they can easily modify both the client and the server and anything else so that the key is kind of secret, but goes "where necessary". That is, there will be such a "tete-a-tete for three with a comrade major."
JFYI: as it is now fashionable to say - hiley likely, I think that "for three" the cart understands precisely with the domestic "comrade major", judging by the fact that the wave has died down after its blocking.
Therefore, I would not discuss things in the cart that can really hurt someone, incl. and myself

anonymity is doubtful, because the NSA could buy x or they know about vulnerabilities, but in general, what kind of security if you work through Windows? You need linux tails where everything is encrypted through Tor and not sit through your home network all your secrets and NSA encryption will not interfere with broadcasting video conditionally through this core
