The "Export" menu item is most likely missing because you don't have permission to export the entity. This is a separate additional right along with Read, Add, Modify and Delete. Until you are given such a right, you will not be able to use (even not see) this item.
Is it possible to transfer data from one CRM portal to another?
Theoretically, this is possible, but I will immediately make a reservation that no one ever does a 100% transfer (this operation is too complicated).
You can transfer partially general information about the transaction, but usually they do not transfer the interaction history, feed, tasks, etc. Those. just the fact.
Can this be done with a SQL query? No, because the system architecture does not imply this.
That is why Bitrix24 does not publish information about the structure of the database.
