Is it possible to make an incomplete sitemap?

The site has a large number of pages, many are already well indexed, and many deep pages are not.
I want to make a sitemap, but wouldn't it be bad if the sitemap is incomplete and many pages and sections are missing?
Next, I want to make mini sitemaps every few days, only on new pages, is this a good practice? and is there any sense in this?
Or is it better to make a full map with millions of pages and support it?

If we are talking about sitemap.xml, then of course you need to make a complete map. Restrictions of 50,000 pages or 10 MB, if exceeded, then you need to make a composite sitemap. And so, study help.yandex.ru/webmaster/indexing-options/sitemap.xml - Google has the same requirements

From my own experience, I can say that a sitemap is of little use. The main thing is that there should be normal linking, and that any page of the site can be reached after a few clicks from the main one.
