1. Is it possible to "see" from the mobile application that there is an external network connection to the device for remote control? For example AnyDesk, but not only.
2. Is it possible to change (or blur) the picture when switching to this application and having external control of the device?
What ways to fight on IOS and Android exist to protect against external control? Do they even exist?

BUT! guaranteed - no way , because if you have root, everything costs
. Moreover, the application can be modified , and if the installation process does not take place under the personal control of the assuring person (on site, not remotely), then these rights settings are removed and even root is not required.
Also, with the help of a specially developed accessibility application (through which applications for the blind are managed), you can access application elements, buttons, text, etc. and automatically press all the necessary confirmation buttons, which will also allow you to bypass prohibitions and warnings about this without root.
ps for ios the same situation with root but most likely more effort will be required
