Is it possible to filter the traffic that will go through the VPN?

There is a raised OpenVPN channel, is it possible to somehow configure the Linux system so that requests go through VPN only to certain hosts, and the rest of the traffic bypasses the channel. There is no access to the VPN server.

You can, by adding the appropriate routes on the client and excluding the one that wraps all traffic.
