Is it possible to export all data from 1C 8 to Excel?

Hello!
1. In the process of developing technical specifications for 1C 8 ERP, I can’t get an answer to the question of whether it is possible to export data in a digestible and readable form (for example, on personnel (name, dates (various), place of work, place of residence, education, etc. .)) from 1C to Excel and then independently rotate pivot tables and other reports / lists that I need?
2. Plus, implementation managers are frightened by manually transferring data from old systems (really old-school) to the new 1C (although now files with data from old databases are easily and correctly read by Excel or saved by it in CSV and read by anything at all). Therefore, another question arises on importsdata - is it really so bad in 1C? In what format is data stored in 1C and is it possible to export JSON, CSV or other templates to it?
3. Currently there is a database of dismissed workers. Implementers do not want to transfer this data, although data on employees are ready to transfer in full. In my simple understanding, the data in the database of employed and dismissed differ only in the absence / presence of the date of dismissal and the reason for dismissal (this is the case in the file with the database of employees). If possible, explain what could be the reason for the refusal to transfer data (personal data + reason for dismissal, WITHOUT history of transfers / holidays / salary) for the dismissed (well, except for whatever they say "garbage in the system")?
Yes, often you need to make a report by year, if you do not transfer the data on the dismissed, you will have to collect collective farms from two files with possible different signs of education, categories, and so on.
