Is it possible to change traffic for software updates? For example, I want to roll back to the old firmware for iPhone, PlayStation, or when updating software on android, slip my firmware with malware.

purely theoretical - no problem, classic MITM attack. In practice, with a probability of 99.99%, the firmware is signed with a key and the non-native one simply will not get up.

You can if it's not TLS or if the device doesn't validate certificates properly.
