And what to bring... When there is a heap of subnets in one network. For example, they dragged a new piece of iron, but its default subnet is not the same. Or in a small office it’s convenient not to spread all sorts of switches and access points across the vlan, but simply assign them a separate subnet. Yes, a lot of everything where it may be needed, even for load balancing!
Are you not confused by the number of IP addresses on one interface in ipv6?

Sites with SSL on different addresses.
Addresses from different subnets on the router.
NS-ki (only stupid to keep them on the same server).

Like when you want to raise your NS.
This, of course, has nothing to do with one interface - it can be on several. But your question is very strange.

hosting
transfer of services from another computer
address in different subnets - for example, in one vlan there is both a gray network and a real one. Some systems are visible only in gray addresses, some only in real ones, and some in both..

@rostel

you need to process a bunch of outgoing connections, and for 1 IP the number of ports is slightly more than 65 thousand,
while there is no way to use one or more interfaces

Router, several providers can be set up in 1 vlan interface.
DMZ zones. 1 interface comes from the provider, and then you resolve the mail server, website, services.
