Is Ethernet the only technology for building LANs?
I am studying to be a computer network administrator. I can’t understand, besides Ethernet technology, is currently used to build local networks, are there any others, if so, where?

Yes, they apply! In addition to WiFi, InfiniBand is still very often used, by the way it has an ethernet emulation option.
A bunch of networks for automation, ranging from CAN and ProfiBus to ARINC and RS-485/422 networks. For any security sensors, all sorts of 1-ware networks are also used.

Ethernet is just a settled universal computer standard that is now out of the box in any motherboard and system, respectively, among computers at the local level, it is the simplest, cheapest and most popular.
But there is a huge variety of other technologies that are actively used and new ones are constantly being created.
