I would like to know if it is possible to create a mobile application for 1C:Enterprise 8. Trade and customer relationship management (CRM)? How will they interact with each other?

I did not make mobile applications, but as far as I know, a mobile application is a separate configuration with its own base and limited functionality. Accordingly, the same mechanisms are available for exchange: web services, xml files, http services (starting from platform version 8.3).
To exchange changes between the same directories / documents, you can use exchange plans, as far as I know.
Starting from 8.3.6, they promise to add support for Google and Apple push notification services. Native support for JSON will also be added starting from 8.3.6.
