Will there be a performance increase if the old hdd (500GB, 5400 - speed) is removed from the system, provided that the system is installed on ssd?

No.
Installed disks do not affect the overall performance of the system in any way, if the system is not actively working with them - they do not contain system files and frequently used programs.
