If there is no legal entity, but there is a desire to describe the process of developing a site, what should I do?

What should a person do who does not have a legal entity, but needs to describe the conditions for developing the site, including the formation of prices, terms, refunds, etc.? How much do you have to google to find people who can help put it together?

Is it possible to prove my position if in the correspondence the person agreed with the conditions that I described to him? Do such files, pieces of paper have at least some legal value?

And what's with the legal entity. No one forbids drawing up an agreement between two individuals, in which you can stipulate almost anything.
