Identification by the provider of application work for ios and android?

I am interested in the possibility of identification by the provider of working applications for Android and ios.
For example, that on a particular device there is a correspondence through a particular messenger with built-in encryption and a TOR connection? Or that a specific device is surfing through a specific TOR browser?

It's elementary.
But you can complicate the task, for example using OpenVPN.

tor has a list of "root servers", it's public. If it was accessed, and then something incomprehensible went over https, you can put a mark "tor is used". Of course, you won't be able to look inside the connection (if there is no trusted key from some Office on the device), but the connection can be recorded - for the future . Connection metadata will be, geolocation, identifier of the one who bought. Any kind of working anonymity is provided only by disposable SIM cards bought for the homeless Vasya. Well, of course, it really depends on who opposes :)

Identification is possible by the nodes (servers) that your phone accesses when using applications (messengers).
It is better to use an encrypted VPN to make endpoints harder to recognize.

I'm interested in whether the provider or sort can see which application goes online from an android or apple device
