You need to start with a script and a sheet of paper, where all the forks of the plot will be painted. With a script in hand, any book on programming will be much easier to read, since you will automatically apply what is written in it to your project .
Game development is primarily design work, and only secondarily is programming.

Start by learning about console input-typing. That's (almost) all you need for a text-based game. Any language is suitable, in which it is possible to display text and receive input from the keyboard, i.e. Pascal is fine too.
In general, it is so sad for the education system. First, they teach in unnecessary Pascal, then schoolchildren begin to study Visual Basic, because it is similar in syntax to Pascal ... And then they realize that they will have to learn a normal programming language.

For text games, you can use one of the ready-made platforms. This may not be so useful for development and will force you to put up with certain restrictions, but it will allow you to get the result at the cost of much less hemorrhoids.
