I am building my first online store. How best to implement?

I read information about the phased development of the site and everywhere I find contradictions. Help me solve them. So, here are the questions that slow down the implementation of my project:

There will be no more than 300 products (varieties of product-1 and product-2) to begin with, then both the product and the functionality will be added gradually (there are a lot of ideas). Of the ready-made templates on themeforest, I did not find even close what I want.
