How will traffic go on the network?
The question is the following. There is a server with AD and on it the DNS server. Address 192.168.0.14.
If I add a host to the domain and in the network settings of this host I specify the address of the AD server with DNS as a gateway, does this mean that the host uses a DNS server to access the Internet?
On the server itself, the gateway is 192.168.0.1 - this is the address of the router.

The default gateway is used to route packets to all unknown (that is, not listed in the host's routes) networks.
In this case, yes - you can say that your AD \ DNS server is used to access the Internet - since all packets outside will go to the default gateway.
But it should be borne in mind that browsers, etc. may have their own proxy server settings, and then they will be used to access the Internet.
