A person is photographed in clothes and separately the wrong side of the back. Then, in Photoshop, the legs are cut off and the back is substituted. Here is an example: youtu.be/tsd5kQrUmLs If you make the right angles and put it on stream, you can do everything very quickly.

Maybe there is such a mannequin with shoulders and without a neck?

A person is easier to dress but harder to cut. And if there is a high-quality wire mannequin (look: www.liveinternet.ru/users/mammifox/post220844245/ all volumes/folds are realistic), then it is more fuss about dressing but easier in post-processing. The wire is easy to cut, you can partially use chroma key. I'm for the mannequin.
