How to write your own Demon on Ubuntu Server?

Don't be so hard on yourself. But I need information. I can’t culturally explain, since there is not enough knowledge in the administration of Server systems, one can say no at all. Therefore, in "village", and those who are well versed, I hope they will explain, I'm ignorant of what's what.
Let's say there are certain IPs that send data on the TCP port. It is necessary that the server receives, responds that the data has been received. Each IP sends its own data format. Accordingly, the server determined each IP, processed their data and recorded it in the database in Mysql. The server must be running all the time without shutting down. In the direction of what to dig?
P/s: I read about socket servers. Since I understand php a little, I took a simple standard socket server from the php portal.
But if the time of the script in php is limited, or my hands are hooked, the script turns off after a minute of work.
Like even in php.ini changed to max_execution_time = 0; But still the script is disabled.

Why reinvent the wheel in PHP when you can just run it as a web server with the same Apache?
PS
Daemons are by and large the same console applications. From here, dance.
