I always work prepaid.
Usually I take 50% down payment. If the project is large, then options are possible (for example, split not into 2 parts, but more, or payment for certain stages of work)
As a rule, the work is structured as follows:
1. Discussion of the project (TOR)
2. Prepayment
3. Work on the project
4. Approval by the customer
5. Payment of the remaining part
6. Transfer of all materials to the customer

Small and frequent stages of payment as the work progresses - minimizing risks for both the contractor and the customer.
Percentage - as agreed. I take 50%. But not the fact that your customer will agree.
