How to version popular cms?

There are several dozen sites on different cms. Main: Bitrix, Opencart, ModX, Wordpress, ExpressionEngine, PrestaShop.
There was a question about versioning these sites. Everything is more or less clear with statics and php code, but how to deal with the database in this case? Sites are constantly updated and improved, while some cms like Modx store their templates and code in the database. I would like to have an up-to-date version of the site during development, while being able to roll back changes in the content, code and database.
I would be grateful for both theory and real examples of versioning the listed cms.
