How to use a specific network interface in PHP?

Now I'm looking for a solution, but maybe someone will prompt faster.
I need outgoing connections made in php for a specific web application or launched through the console to be made through a separate network interface.

This is not addressed at the application level.
Either setting up routing, or output the application to a separate virtual machine, which you can attach to the desired interface.
