How to update TeamSpeak 3 server on Ubuntu 16?

How to upgrade a running Team Speak 3 server on Ubuntu 16 I tried to replace the files with the replacement. Did not work out. I downloaded the files from the archive of the latest version of the server, restarted the server, and there is the old version.

It's usually done like this
Nobody bothers to make a backup of the entire folder with the server before any actions, in order to restore it in case of failure
How is that? What did they say? Probably at first it is necessary to stop the server, and then to replace.
