How to unload the 1C:Enterprise database in xml or csv format?
There is a database in the baza.db format, I opened the configurator and did Load the database, I received all the necessary data in 1C:Enterprise. Now I’m thinking about how to upload this stuff in an easy-to-read format so that the script can just run through the fields and read them for your needs

The definition of "this is good", to put it mildly, is not specific. What's the use of uploading scheduled task lists with schedules that never started? Or what's the use of downloading the user activity log?
1) To begin with, I would like to note that a number of typical and industry-specific configurations already have standard processing for exporting to XML.
2) Further, if you just need a registry of documents or a list of elements of directories and what you see in 1C:Enterprise suits you, then right-click on the list and select the "Display list" option in the context menu, set up a list of columns that interest you, and the result you can save in several formats in the list of which are delimited text and Excel which you can already overtake in csv.
3) If you need, for example, not just a product directory, but a directory with columns for the current balance and price prices, or a list of customers indicating the sales volume or the date of the last contact, then look at the infostart.ru website - there are many processings for such complex downloads.
4) Order the creation of processing on one of the freelancer sites. According to my observations, there is a lot of competition and you can solve such a small problem for a very modest reward.
Write a processing that will unload the data you need in the required format.
