How to transfer a site on Drupal 7 to another hosting?

There is a site on Drupal 7 with a bunch of modules, in particular commerce. You need to transfer it to another server, but without some modules. Is it possible to dump by specifying modules that are not needed?

It is forbidden. Disable modules, uninstall them, transfer files and database.
