How to speed up composer with repositories mirroring?

I heard at one of the conferences that the composer dependency update was accelerated by creating mirror repositories in the local network.
How exactly can this be done? Rewriting the paths to the repositories in all composer.json by hand seems like a terrible idea. Or am I misunderstanding how the repositories key works in the composer.json file?
