How to shoot this kind of training videos?

Faced with the situation that you need to shoot short training videos.
Interested in a few questions:
1) What to shoot? Do I need to see the mouse or is it better to "draw" the mouse on the video?
2) Zoom in on some video fragments, i.e. from the general background, one part approaches, then another, then a general view, etc.
*It would be great if the video recording could be rotated at an angle.*
3) What is the best way to record sound for a video.
Interested directly in both paid and free solutions.
