I managed to install ruby ​​- then sass - then run --watch. But the fact is that this operation has to be repeated constantly, including the installation of ruby. Although the ruby ​​and sass files are stored in the folder with the site. I guess I need some kind of script or setup of something to run --watch with one click. Tell me please

You need to build your docker-image based on what you are using, with ruby ​​and sass installed there (or look for one ready for these purposes)
And already create your container based on this image
